We are a pretty nerdy/geeky family and don’t really need any sort of reason to celebrate pie. It’s fun to celebrate silly holidays like these! With Pi / π Day around the corner, I’ve been searching for all sorts of recipes to try out.

Here is a short list of pie recipes I’ve been holding on to. Two of my most favorite pies are pumpkin and coconut custard! Do you like pie? What type of pie is your favorite?

Triple Coconut Custard Pie by Nicole of BakingBites - When searching for a new coconut custard pie recipe to try out, I found a recipe calling for coconut milk instead of regular milk. That lead to finding another recipe using coconut cream instead of coconut milk. My search ended when I discovered this recipe using coconut in the crust, filling, and topping! SOLD!

Key Lime Pie by Annalise of CompletelyDelicious - I’ve had this key lime pie recipe saved years and years ago. I’ve even bought limes twice, in preparation to make this pie…and never did! I’m hoping to finally make this simple pie sometime this year.

Chess Pie by Becky of TheVintageMixer - I’ve also had this chess pie recipe saved years and years ago as well. It reminds me of a creamy custard, and I love creamy pies and custards pies. Seems like a combination of them both!

Pumpkin Pie by Alton Brown - I love a traditional pumpkin pie, and I love anything Alton Brown. This gingerbread crust has me bumping this pumpkin pie recipe up my list!

New York Cheesecake by Shiran of PrettySimpleSweet - My go to NY style cheesecake recipe! Some may argue cheesecake is not a pie, but I will argue pie is anything with a crust. Cheesecake has a crust; therefore, cheesecake is a pie! Even if the name states otherwise.
